
Ingredients:
8 oz. (225 g) spaghetti
2 large eggs
1 cup grated Parmesan cheese
4 oz. (115 g) pancetta or bacon, diced
2 cloves garlic, minced
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Cook spaghetti according to package directions until al
dente. Drain and set aside.
Whisk together the eggs and grated Parmesan cheese in a
bowl. Set aside.
In a skillet, cook diced pancetta or bacon until crisp. Add
minced garlic and cook for another minute.
Remove the pan from the heat. Add the cooked spaghetti to
the skillet and toss to combine with the pancetta and garlic.
Pour the egg and cheese mixture over the pasta, tossing
quickly to combine. The heat from the pasta will cook the eggs and create a
creamy sauce.
Season with salt and pepper. Garnish with chopped parsley.
Serve immediately.
